Businesses that raise and sell premium meats used to do over 85% of their business with fine dining restaurants. Since that industry has imploded, many of these companies are now selling on-line, directly to home cooks. Snake River Farms, located in the Pacific Northwest, is one of these companies. It is part of a family-owned and operated business dedicated to producing the highest-quality beef and pork. Founded in 1968, it started as a ranching and feeding operation and has grown to incorporate every step of the animal’s life cycle. This comprehensive approach ensures the quality of all their meats. The company also demonstrates its respect for the product by their commitment to the environment and environmentally sound ranching practices.

They have three styles of packaging and delivery: fresh, frozen, and frozen product in bulk––their “provisions” category.

For the fresh product, master butchers cut steaks to order and the meat is shipped fresh, on ice. The offerings include prime beef cuts: New York strip, skirt steak, porterhouse, rib eye, ground beef patties and petit filet. In the fresh category, there are also American wagyu steaks: dry-aged tomahawk cut, porterhouse steaks, ground beef, and a Brazilian steak house favorite, the “picana,” or sirloin cap. Snake River also sells “chef’s gold,” prime tenderloin fat that can be used in place of demi glace or butter for basting. All fresh products must be sent by overnight or expedited shipping at $49.99 per delivery. With this pricey cost for fresh delivery, it makes sense to stock up with each order.

Frozen products include the same choices of prime and wagyu steaks. They also include wagyu hot dogs and all cuts of purebred Berkshire pork, an especially tasty heritage breed. All orders are shipped ground, express, or overnight, selected at checkout.

If you buy in bulk, the provisions category, Snake River is able to offer better pricing.

There is no question that this level of quality is expensive. The price represents the cost of responsibly raising heritage breeds of beef and pork. These meats are also extraordinarily delicious.
