Garlic Naan Bread
Creating vegan recipes has taught me some invaluable new techniques and introduced me to new ingredients, particularly in the arena of baking.
The single most useful technique, not only when preparing vegan dishes, is the flax egg. They work in nearly every baking recipe and function as a binder in veggie burgers and vegetable pancakes.
Flax Egg
1 Tbl Ground Flax seeds (I grind my own in a coffee grinder)
3 Tbl Warm Water
Mix together well and let it sit for 10-15 minutes before using. It should be quite thick. Double this recipe for 2 eggs, triple for three eggs, etc.

Another excellent idea to come out of preparing strictly plant-based foods is the use of vegetarian milks made from almond, soy, oat, cashew or hemp. They are easily substituted for cow’s milk in almost all recipes. I can change my favorite dishes without sacrificing any taste or quality.
