Recipe inspired by Zaitoun, Yasmin Khan
Ingredients
8 bone-in chicken thighs, or a combination of thighs and split breasts
¼ cup olive oil
Juice of 2 lemons
4 garlic cloves, crushed
¼ cup za’atar
Instructions
Marinate the chicken in olive oil, lemon, garlic and za’atar for at least 2 hours and up to 6 hours.
Preheat the oven to 400°F. Roast the chicken for around 35 minutes, or until the juices run clear and the skin is beautifully brown.
