3 parts Prosecco
2 parts Aperol
Splash of soda

Pour over ice and garnish with a slice of orange peel.
Angel’s Kiss
Will Noland, at the Sidecar in Brooklyn, has created an even better version of the drink, the Angel’s Kiss. He underscores the appealing bitterness of the Aperol with a hint of smokiness from Mezcal.
Ingredients
1.5 oz Aperol
.5 oz Mezcal (something young,”joven”, not too smoky)
3 oz Prosecco
1.5 oz soda
Instructions
Fill a large wineglass about three-quarters full with ice, add the ingredients, stir and garnish with a lemon or orange twist. My brother loves this drink but found it too complicated to make the Kiss one at a time at a party. He chilled all the components, mixed up a pitcher, and served the drink in champagne flutes. That worked.
