Yuzu koshō is a Japanese seasoning paste. It is made from chili peppers, grated yuzu rind, and salt, and is then allowed to ferment. I have written about it before in the Gazette. Both the yuzu juice and yuzu kosho are available for mail order from Amazon.com and have lots of uses in the kitchen.
Ingredients
3 Tbl extra virgin olive oil
2 Tbl yuzu juice
1 Tbl minced scallion
1-2 tsp. green yuzu kosho
2 tsp soy sauce
